Cheeses Mentioned

XO

Revered for its rich flavors of butterscotch, whiskey, and pecan, Beemster X-O has a deep ocher interior.

Pairs with:

Dark beer. Olives, fig cake, spicy honey roasted nuts and honeycomb.

Vlaskaas

Historically made once a year to celebrate the flax harvest. A review of historic recipes brought it back and we thought it was just too good to only make once a year!

Pairs with:

Session ale, mineral-y white wine. Apples, fresh figs, walnuts and artisan salami.

Goat

Beemster Goat is not a soft, fresh chevre. Instead, this is a semi-firm, aged Goat Gouda. Mild, sweet & refreshing.

Pairs with:

Crisp white wines and pale lagers. Wildflower honey, crushed cashews and melt atop whole wheat bread.
